A great quick gift that's perfect to "just say thanks" to that special teacher or friend who made your day.
 

Thank You Bean Soup Mix!

Ingredients:
• 26 ounce empty candle contain, clean and dried
• 1 cup dried red beans
• 1 cup dried great northern beans
• 1 cup dried pinto beans
• 2 bay leaves
• 2 tablespoons dried onion, minced
• 1 tablespoon garlic powder
• 1 tablespoon chicken bouillon
• 1 teaspoon dried oregano
• ½ teaspoon dried thyme
• ½ teaspoon freshly ground black pepper
• 1 teaspoon dried mustard

Use the instructions on the Bright Ideas page to prepare the candle jar.

1. Layer the dried beans evenly in the jar.
2. Place the seasonings, except for the bay leaves, into a sandwich bag. Turn the bag so the seasonings go to one corner, Use a twist tie or rubber band to secure the seasonings. Cut the bag about an inch above the tie to make a ‘seasoning pouch’.
3. Slide the bay leaves down the side of the jar.
4. Place the seasoning pouch on top of the beans and add the lid.

Download and print the recipe directions onto white cardstock or photo paper. Print the file 2-sided. Cut apart and punch a hole in the corner. Tie to the jar with a pretty ribbon. The container shown in the picture has a ponytail “scruncie” around the rim.

Ingredients:
• 1 jar Thank You Bean Soup
• 4 to 5 Cups Water
• 1 can (29 ounce) Tomatoes with Italian Herbs, diced
• 2 smoked Ham Hocks
• 1 tablespoon Baking Soda

Recipe Instructions:
1. Remove seasoning packet and set aside.
2. Put the beans in a large Dutch oven and cover with water. Remove any beans that float or look bad. Place pan on heat and bring to boil. Boil for 2 minutes. Remove from heat and let the beans soak for 1 to 2 hours, covered.
3. Drain the bean and discard water.
4. Add 4 to 5 cups of water, tomatoes, ham hocks and contents of the seasoning packet. Bring to a boil and reduce heat to a simmer. Cover and simmer for 2 hours until the beans are tender.
5. Add the baking soda and stir in. This will cause the soup to foam releasing much of the "gas forming" contents of the beans. It will also cause the beans to break down a bit, making the soup thicker.
6. Serve in large bowls with a dash or two of hot sauce and cornbread.
